July 4th Guilt-Free Cheesecake

 

This will be a hit at your July 4th Party!!

*Substituting Greek Yogurt Cream Cheese for regular cream cheese gives you 3x more protein with half the calories and fat! Preheat oven to 300 degrees.

Crust:

  • 1 cup dates, pitted and soaked in warm water for 10 minutes.
  • 1 cup almonds

Mix in food processor until blended. Press into pan

   

 

Filling:

  • 1 cup Greek Yogurt cream cheese (8 oz)
  • 1 cup Greek Yogurt, plain
  • 2 large eggs
  • 2 egg whites
  • 1 oz. cheesecake flavored pudding mix
  • ½ cup stevia
  • 1 Tablespoon vanilla extract

Mix cream cheese and yogurt together. Add eggs, egg whites, pudding mix, stevia and vanilla extract and mix until smooth. Pour over crust.

 

   

Bake at 300 degrees for 35-40 minutes or until almost set. Turn off oven, open door half way and let sit for another 20 minutes. Remove from oven and set aside.

Topping:

  • 10 strawberries
  • 3 Tablespoons water

Cut off green top and place in blender with water. Blend until smooth

Top with sauce, fresh strawberries and blueberries or whatever else you choose.
