All you need is about 10 minutes in the morning to prepare a delicious, hardy and healthy dinner for your family. Add a nice green salad and you are good to go.

 

SLOW COOKER CHICKEN TORTILLA SOUP

 

Ingredients:

2 tsp olive oil

3/4 cup chopped onion

3-4 garlic cloves

4 cups chicken broth

1 8-oz can tomato sauce

1/4 cup chopped cilantro

1 15-oz can black beans, drained and rinsed

1 15-oz can corn

1.5 tsp ground cumin

1/2 tsp oregano

2 Tbsp taco seasoning

1 lb. chicken breast

Topping:  Add when serving to desired taste

Shredded cheese

green onions, chopped

fresh cilantro, chopped

Avacado

Sour Cream or Greek Yogurt

Blue Tortilla chips for an extra crunch

 

Directions:

Heat olive oil in a pan and sauté garlic and onion until soft, 2-3 minutes. Add to to the slow cooker and add the chicken broth, tomato sauce, cilantro, beans, tomatoes, corn, cumin and oregano. Place the full chicken breasts on top, Cover and cook on low for 4-6 hours. Remove the chicken, shred with a fork and return to slow cooker.
